S'mores Energy Bites

No campfire? No problem. These energy bites are inspired by your favorite summertime treat. Enjoy them as a quick and tasty source of energy on the go or before a workout.

Makes: 20-25 bites

  • 1/2 cup creamy nut butter
  • 1/3 cup honey
  • 1 Tbsp chia seeds or flax seeds (optional)
  • 1 tsp vanilla extract-
  • 1/2 tsp cinnamon
  • 3/4 cup plain oats
  • 2 sheets graham crackers, crushed
  • 1/4 cup mini chocolate chips
  • 1/4 cup mallow bits or chopped marshmallows (optional)
  • In a large bowl, mix together the honey, peanut butter, seeds, vanilla, and cinnamon until smooth (tip: melt peanut butter in the microwave or stovetop to make it easier to stir)
  • Gently fold in the oats, graham crackers, chocolate chips and marshmallows
  • Refrigerate the mixture for at least 30 minutes
  • Remove the mixture from the fridge, then roll into bite-sized balls
  • Store refrigerated in an air-tight container for up to a week
Recipe Notes:
  • Use any kind of nut or seed butter you prefer (ex: peanut, almond, sunflower)
  • Substitute honey with maple syrup, but note that it has a thinner consistency and may not bind the balls together as well
  • Use any type of plain oats you prefer (flavored instant packets and steel cut not recommended)
