Sheet Pan Roasted Brussels Sprouts, Sweet Potatoes, & Chicken Sausage

Raise your hand if you love sheet pan meals! They're easy, quick, and absolutely delicious. This particular combination features hearty brussels sprouts, caramelly sweet potatoes, and savory chicken sausage- a balanced meal that is sure to satisfy!

Time: 35 minutes

Serves: 4-6

Ingredients:

  • 2 medium sweet potatoes, washed and chopped into bite-sized pieces
  • 1 lb brussels sprouts, washed and chopped into bite-sized pieces
  • 12 oz pre-cooked chicken sausage, sliced into rounds (I recommend an apple or maple flavored variety)
  • 2 Tbsp oil, divided (any kind you prefer)
  • 1 tsp rosemary
  • 1/2 tsp sage
  • 1/4 tsp garlic powder
  • Salt and pepper, to taste

 Directions:

  • Preheat oven to 425°F and line two baking sheets with aluminum foil or a silicone mat
  • Arrange the sweet potatoes and brussels sprouts evenly on the baking sheets
  • To the sweet potatoes, add 1 Tbsp oil + rosemary and sage. Toss well to coat the pieces evenly
  • To the brussels sprouts, add 1 Tbsp oil + garlic powder. Toss well to coat the pieces evenly
  • Add salt and pepper to both the sweet potatoes and the brussels sprouts
  • Place the veggies in the oven for 15 minutes
  • Remove the veggies, then add the chicken sausage and cook for another 10-15 minutes or until everything is golden brown and crisp around the edges
  • Serve immediately, or let cool and divide among food storage containers, cover, and refrigerate/freeze 

Recipe Modifications:

  • Gluten-free: None
  • Nut-free: None
  • Vegetarian/Vegan: Replace the chicken sausage with one block of sliced tofu coated in 1 Tbsp oil + desired seasonings. The tofu can cook for the full 25-30 minutes or until desired crispness is reached

Recipe Notes:

  • If would like to add more protein to this meal, you can double the chicken sausage (or tofu)
  • I recommend using Trader Joe's Sweet Apple Chicken Sausage for this recipe
