Savory Sheet Pan Sweet Potatoes, Brussels Sprouts, Apples, and Chicken

Would you look at all the colors in this dish? Such an easy way to #eattherainbow! I love the way the caramelized brussels sprouts compliment the tanginess of the apples. Can't forget about the juicy chicken, too! Yummmm

Time: 30-40 minutes

Serves: 4-6

Ingredients:

  • 3 tablespoons oil, divided (any kind you prefer)
  • 1 lb boneless skinless chicken breasts or thighs
  • 1lb brussels sprouts, washed, trimmed, and sliced into halves or quarters
  • 2 medium sweet potatoes, washed and chopped into bite-sized pieces
  • 2 Granny Smith apples, washed and chopped into bite-sized pieces
  • Salt and pepper, to taste
  • 1 tsp garlic powder
  • 1 Tbsp dried thyme

Directions:

  • Preheat oven to 425 ºF
  • Line 2 baking sheets with aluminum foil or silicone mats
  • Place the chicken on one sheet, and the chopped brussels sprouts and sweet potatoes on the other (leave the apples aside for now)
  • Toss the brussels sprouts and sweet potatoes in 2 Tbsp of oil, then add 1 Tbsp of oil over the chicken
  • Combine the salt, pepper, garlic powder, and thyme together, and sprinkle evenly over both baking sheets
  • Place both baking sheets in the oven, and cook for 20 minutes
  • Remove the chicken baking sheet from the oven, then add the sliced apples and return to the oven
  • Continue cooking both baking sheets for another 10-15 minutes or until the vegetables are to desired tenderness/crispness and the chicken is cooked to an internal temperature of 165 ºF
  • Serve immediately or divide among food storage containers, let cool, cover, and store in the refrigerator/freezer

  • Nut-free: None
  • Vegetarian/Vegan: Replace the chicken with tofu or legumes like canned legumes or cooked lentils. If preparing tofu, press and drain the tofu, slice it into bite-sized pieces, then prepare it like you would the chicken.
