Mediterranean Quinoa Salad

This dish is bursting with flavor and lots of nutritious foods like protein-rich quinoa, antioxidant-powered cucumbers, tomatoes, and red onions! The best part is that you can enjoy it cold, so it makes for the perfect dish to help you cool off in the heat!

Time: 40 minutes

Serves: 5-7

Salad Ingredients:

  • 1.5 cups uncooked quinoa
  • 1 large cucumber, washed and chopped into quarters
  • 1 cup cherry tomatoes, washed and sliced
  • ¼ red onion, diced
  • ⅓ cup parsley, chopped
  • ½ cup feta

Dressing Ingredients:

  • 2 Tbsp honey or maple syrup
  • 1/4 cup lemon juice
  • 1/2 cup olive oil
  • 1/2 tsp thyme
  • 1 tsp garlic powder
  • Salt and pepper, to taste

Directions:

  • Cook quinoa according to directions, then rinse with cold water until cool
  • Whisk together the dressing ingredients
  • In a large bowl, mix together the salad ingredients, then add the dressing and mix well
  • Serve immediately, or divide among food storage containers, and store in the refrigerator

  • Vegan: Use maple syrup instead of honey, omit feta cheese and sub with sliced almonds or pine nuts

Recipe Notes:

  • I don't recommend freezing this dish due to the high water content of the vegetables used. If you would like to extend the shelf life of this dish, I recommend freezing the dish without the cucumber and tomatoes. Thaw before serving, then add fresh cucumbers and tomatoes for optimum freshness!
  • You can make this recipe even more filling by adding an additional source of protein such as chickpeas or grilled chicken
