Hearty Barley Salad

Hearty Barley Salad

This is one of my favorite salads to prepare when I'm in a pinch! It features fiber-rich barley, protein-packed chickpeas, crunchy almonds, plus lots of flavor from the feta and homemade dressing! I recommend adding the dressing just before serving for optimal freshness. Enjoy!

Time: 15 minutes

Serves: 5-7

Salad Ingredients:

  • 1.5 cups quick-cooking barley
  • 2, 16 oz cans chickpeas, rinsed and drained
  • 10 cups salad greens (any kind you prefer), washed and chopped
  • 3 oz feta cheese, crumbled
  • 1/3 cup sliced almonds

Dressing Ingredients:

  • 1/4 cup apple cider vinegar (or any other vinegar you prefer)
  • 1/2 cup olive oil
  • 1 tsp dijon mustard
  • Salt and pepper, to taste


  • Fill a small pot with water and bring to a boil
  • While you wait for the water to boil, rinse and drain chickpeas
  • When the water is boiling, add barley and cook according to package instructions. Once finished cooking, drain, set aside, and let cool
  • To prepare the dressing, whisk all dressing ingredients together and store in an airtight container or in individual containers in the refrigerator (Note: This dressing may solidify in the refrigerator. If this occurs, allow the dressing to “thaw” at room temperature or run under warm water before use. Separation is natural)
  • Combine the barley, chickpeas, greens, feta and almonds together. Serve immediately, or divide among food storage containers and store in the refrigerator
  • Add the salad dressing just before serving

Recipe Modifications:

  • Gluten-Free: Replace barley with quinoa
  • Nut-Free: Omit almonds, and replace with pumpkin or sunflower seeds (if tolerated)
  • Vegetarian: None
  • Vegan: Omit feta cheese
