Easy Peasy Pesto Pasta

Anyone else a huge fan of pesto!? I love the pretty green color and robust flavor it adds to pasta. This dish is not only delicious, but it also boasts nutritious foods like peas and zucchini to help you feel energized and satisfied. Best part? It's ready in less than 25 minutes! #yeahgirl

Time: 25 minutes

Serves: 5-7

Ingredients:

  • 16 oz whole wheat pasta, uncooked
  • 2-3 medium zucchini, washed and sliced
  • 1 Tbsp oil (any kind you prefer)
  • Salt and pepper, to taste
  • 6 oz pesto (homemade or store-bought)
  • 1 cup peas (frozen & thawed, or canned)
  • ½ cup sun-dried tomatoes (optional)

Directions:

  • Cook pasta according to instructions
  • To a large pan, add the zucchini and oil and saute over medium heat until soft and tender
  • Drain the pasta and add it back into the pot
  • Add the pesto to the pasta and mix well. Then, add the zucchini, peas, sun-dried tomatoes, and any other desired mix-ins
  • Serve immediately, or divide among food storage containers, let cool, and store in the refrigerator/freezer

Recipe Modifications:

  • Gluten-Free: Use gluten-free pasta and pesto
  • Nut-Free: Use tomato sauce or nut-free pesto
  • Vegetarian/Vegan: None

Recipe Notes:

  • This dish can be easily frozen
  • To make this dish even more filling, serve with ground meat or meatballs
