Taco Salad

This salad is a satisfying, no-cook option that you can use on those days where you don't feel like turning on your oven.

Serves: 4-6

Ground meat ingredients:

  • 1 lb ground beef, chicken, turkey, or ground meat alternative
  • 1/4 cup store-bought or homemade taco seasoning

Salad ingredients:

  • 6-8 cups mixed greens (any kind you prefer)
  • 1 cup bell pepper, chopped
  • 1 cup cherry tomatoes, chopped
  • 1/2 red onion, chopped
  • 1 cup black beans, rinsed and drained
  • 1 cup frozen corn, thawed
  • 1 avocado, sliced
  • 1/2 cup dressing (any kind you prefer)

Additional toppings:

  • Tortilla chips, crushed
  • Sliced jalapeños
  • Salsa
  • Cilantro
  • Lime juice
  • Sour cream or Greek yogurt
  • Shredded cheese

Directions:

  • Cook ground meat over medium heat until browned, making sure to break it up. Add in seasoning mix and 2/3 cup water, heat to boil, and then reduce to simmer for 3-4 minutes stirring often. Remove from heat
  • Combine salad ingredients in a large bowl with preferred dressing. If meal prepping, only add salad dressing just before enjoying salad
  • Serve with desired toppings and enjoy!
