Strawberry Fields Chicken Salad


This Strawberry Fields Chicken Salad makes transports you to a picnic on a summer's day. It comes together in just a few minutes and pairs perfectly with our homemade Honey Lemon Dressing.

Salad Serves 1-2 | Dressing Serves 4-6

Salad Ingredients
  • 2+ cups salad greens
  • 1 cup fresh, chopped strawberries
  • 1-2 Tbsp sliced almonds or pecans
  • 1-2 Tbsp feta or goat cheese
  • 1/4-1/2 avocado
  • 3-6 oz cooked, sliced chicken breast
  • Salad dressing, to taste
Dressing Ingredients
  • 1/3 cup olive oil
  • 1/3 cup lemon juice
  • 1/2 tsp minced garlic
  • 1 tsp honey
  • 1 tsp dried thyme
  • Salt & pepper, to taste
  • Whisk the dressing ingredients together and store in an airtight container in the refrigerator for up to 1-2 weeks
  • Toss the salad ingredients together, then drizzle with dressing
  • Enjoy with whole wheat crackers, toasted bread, or your favorite starch
Recipe Notes:
  • Adjust oil to lemon juice ratio depending on desired sharpness of dressing (more juice = more acidity)
  • Substitute strawberries with any other fresh fruit such as peaches, blackberries, or apples
  • Substitute almonds with any other type of nut or seed such as pecans, walnuts, or pumpkin seeds
  • Omit the cheese or substitute with a plant-based alternative
  • Substitute chicken with salmon, chickpeas, or your favorite protein
