Split Pea Soup

gluten-free vegan vegetarian

This creamy soup is comforting, warm, and easy to make. Enjoy with a side salad and crusty bread for a balanced meal. 

Serves: 4-6

Ingredients:

  • 1 cup onion, diced
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 lb dried split peas
  • 6 cups broth (any kind you prefer)
  • 2 tbsp oil
  • 1 tsp minced garlic
  • ½ tsp thyme
  • ½ tsp paprika
  • 1 bay leaf
  • Salt and pepper to taste

Directions:

  • Add all ingredients to a slow cooker, and cook on “high” for 5-6 hours, or on “low” for 8-10 hours
  • Remove bay leaf, serve immediately or let cool, cover, and store in the refrigerator
