Salad Serves 1-2 | Dressing Serves 4-6
Salad Ingredients
- 2+ cups salad greens
- 1 cup fresh, chopped strawberries
- 1-2 Tbsp sliced almonds or pecans
- 1-2 Tbsp feta or goat cheese
- 1/4-1/2 avocado
- 3-6 oz cooked, sliced chicken breast
- Salad dressing, to taste
- 1/3 cup olive oil
- 1/3 cup lemon juice
- 1/2 tsp minced garlic
- 1 tsp honey
- 1 tsp dried thyme
- Salt & pepper, to taste
- Whisk the dressing ingredients together and store in an airtight container in the refrigerator for up to 1-2 weeks
- Toss the salad ingredients together, then drizzle with dressing
- Enjoy with whole wheat crackers, toasted bread, or your favorite starch
- Adjust oil to lemon juice ratio depending on desired sharpness of dressing (more juice = more acidity)
- Substitute strawberries with any other fresh fruit such as peaches, blackberries, or apples
- Substitute almonds with any other type of nut or seed such as pecans, walnuts, or pumpkin seeds
- Omit the cheese or substitute with a plant-based alternative
- Substitute chicken with salmon, chickpeas, or your favorite protein
