Harvest Apple Salad

Crisp apples, savory cheese, and crunchy pecans make for a hearty yet refreshing salad.

Salad Serves: 1-2
Dressing Serves: 4-6

Salad Ingredients
  • 2+ cups salad greens
  • 1 cup fresh chopped or sliced apple
  • 2 Tbsp chopped pecans
  • 2 Tbsp gorgonzola or blue cheese
  • 2 Tbsp dried cranberries or raisins
  • 3-6 oz of sliced chicken breast
Dressing Ingredients
  • 1/3 cup olive oil
  • ⅓ cup apple cider vinegar
  • ½ tsp minced garlic
  • 1 tsp maple syrup
  • 1 tsp dried thyme
  • Salt & pepper, to taste
Directions:
  • Whisk the dressing ingredients together and store in an airtight container in the refrigerator for up to 1-2 weeks
  • Mix the salad ingredients together, then toss with the dressing
Recipe Notes:
  • Can sub apples with any other fresh fruit such as pears or berries
  • Can sub pecans with any other type of nut or seed such as walnuts or pumpkin seeds
  • Can sub cheese with a plant-based alternative or simply omit
  • Can sub chicken with salmon or rinsed and drained chickpeas
