Salad Ingredients
- 2+ cups salad greens
- 1 cup fresh chopped or sliced apple
- 2 Tbsp chopped pecans
- 2 Tbsp gorgonzola or blue cheese
- 2 Tbsp dried cranberries or raisins
- 3-6 oz of sliced chicken breast
- 1/3 cup olive oil
- ⅓ cup apple cider vinegar
- ½ tsp minced garlic
- 1 tsp maple syrup
- 1 tsp dried thyme
- Salt & pepper, to taste
- Whisk the dressing ingredients together and store in an airtight container in the refrigerator for up to 1-2 weeks
- Mix the salad ingredients together, then toss with the dressing
- Can sub apples with any other fresh fruit such as pears or berries
- Can sub pecans with any other type of nut or seed such as walnuts or pumpkin seeds
- Can sub cheese with a plant-based alternative or simply omit
- Can sub chicken with salmon or rinsed and drained chickpeas
