Serves 4-6
Ingredients
- 2 large potatoes, washed, patted dry, and sliced into fries
- 2 Tbsp oil, any kind you prefer
- Salt and pepper, to taste
- 4 burger patties or 1 lb ground meat (seasoned with garlic and salt)
- 4-6+ cups salad greens
- 1-2+ cups chopped vegetables (cucumber, carrots, tomatoes)
- Salad dressing, to taste
- Other favorite burger toppings: pickles, onions, mustard...
- Pre-heat oven to 375 Fº
- In a large bowl, toss the potatoes in oil, salt, and pepper, then spread on a lined baking sheet
- Place the potatoes in the oven, and cook for 20-25 minutes. Turn up the oven to 425 Fº and cook for an additional 20 minutes, or until golden brown and crispy
- Cook burger patties or ground meat until appropriate internal temperature is reached (160 Fº for beef, 165 Fº for poultry)
- Chop patties into bite-sized pieces
- Assemble bowls by combining mixed greens, chopped vegetables, salad dressing, and preferred toppings with the burger patties and fries
- Keep the skin on your potatoes for extra nutrients & fiber
- Substitute ground meat or patties with a plant-based alternative such as veggie burgers (cook to package instructions) or black beans
