Pumpkin French Toast

Who doesn't love plate of steaming, cinnamon-dusted french toast? Especially when it's seasoned with festive pumpkin and pie spice. Enjoy with your favorite toppings and sliced fruit for a balanced breakfast.

Serves: 2-3

Ingredients

  • 2 eggs
  • ¼ cup pumpkin purée
  • ¼ cup milk
  • 1 Tbsp maple syrup
  • 1/2 tsp pumpkin pie spice
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • ~4-6 slices of bread of choice

Directions:

  • Preheat a greased skillet over medium heat
  • Whisk the eggs, pumpkin purée, milk, maple syrup, vanilla, and spices together and pour into a shallow dish
  • Dip 1 slice of bread into the mixture and coat on both sides, then add it to the pan
  • Cook each side for about 3-4 minutes, or until golden brown
  • Repeat with each slice of bread or until you run out of egg mixture
